Chive and soy tofu

Serves 4

  1. 1lb firm tofu
  2. 2-1/2tb soy sauce
  3. 2tb chives
  4. 1tb mirin
  5. 1tb sesame oil
  6. 1/2tb sesame seeds, toasted
  7. 1/2tb gochugaru
  8. 1tsp honey
  9. 1 clove garlic
  • Press and drain tofu for 15-20 minutes. Cut into cubes. Whisk remaining ingredients, toss and serve.

Sweet glazed potatoes

Serves 4

  1. 2lb yukon potatoes, 1.5-2in in diameter, quartered
  2. 4tb soy sauce
  3. 4tb mirin
  4. 1tb gochujang
  5. 1tb sugar
  6. 2 cloves garlic
  7. 1/2 cup water
  8. 2tsp sesame oil
  9. 2tsp rice vinegar
  10. 2tsp toasted sesame seeds
  11. 2 scallions
  • Cook potatoes covered, stirring occasionally, on medium heat for 10-12 minutes.
  • Meanwhile, mix 3tb soy sauce with 3-7. Add to potatoes, bring to a simmer, lower heat to medium, cover and cook, stirring occasionally, for about 10 minutes. Take off-heat, toss with remaining ingredients and serve.
