Miso-marinated cod fillets

Serves 4

  1. 4 6oz cod fillets
  2. 1/2 cup white miso
  3. 4tb sake
  4. 4tb mirin
  5. 3tb sugar
  6. 3tb gochujang
  7. 1tsp lemon juice
  8. 1tsp rice vinegar
  • Marinate ingredients for 1-4 hours. Wipe dry and rest fillets on a rack for 30 minutes.
  • Cook skin-side down for 3 minutes. Flip for 1 minute. Serve.
