Berry Collins

Serves 8

  1. 1-1/2 cups berries
  2. 1 cup sugar
  3. 1/2 cup water
  4. 2 cups dry gin, chilled
  5. 3/4 cup lemon juice
  6. Ice
  7. 2 cups club soda, chilled
  • Bring 1-3 to a boil and stir until sugar dissolves. Simmer, stirring occasionally, for 20-25 minutes. Let cool and strain, pressing down on berries to extract liquid; discard solids.
  • Mix berry syrup with 4-6 and rest for 3-5 minutes. Fill glasses with ice, divide mixture and top with 4tb club soda. Serve.
