Soy and garlic steamed eggplant

Serves 4

  1. 4 asian eggplants, halved and cut into 3in pieces
  2. 2tb soy sauce
  3. 2 cloves garlic, crushed
  4. 2 scallions
  5. 1tb sesame oil
  6. 2tsp sesame seeds, toasted
  7. 1tsp gochugaru
  • Steam eggplant for 10 minutes. Squeeze dry, cut into strips and toss with remaining ingredients. Marinate for 30 minutes, discard garlic and serve.
