Feta olive puff pastry bites

Makes 18

  1. 2 5in x 5in puff pastry sheets, each cut into 9 squares
  2. 1tb olive oil
  3. 3-1/2oz feta
  4. Zest of 1 lemon
  5. 18 olives
  • Press center of squares to make slight indentation. Brush with oil and fill indentations with 3-4; some will be left over. Top with olives, sprinkle remaining feta mixture and bake at 400 degrees for 15-20 minutes. Serve.
