Bulgogi vegetable stew

Serves 6

  1. 1 asian pear
  2. 1-1/2tb honey
  3. 1/2tsp pepper
  4. 1/2in ginger
  5. 1 onion, sliced
  6. 6 cloves garlic
  7. 3-1/2tb soy sauce
  8. 2-1/2tb sesame oil
  9. 1lb sirloin, sliced
  10. 1 quart beef stock
  11. 1tb gochujang
  12. 1 small red bell pepper, julienned
  13. 1 small zucchini, julienned
  14. 1 carrot, julienned
  15. 2oz enoki or shiitake mushrooms, sliced
  16. 4oz sweet potato noodles, soaked for 15 minutes and drained
  17. 4 scallions
  • Puree 1-4 with a quarter onion, 4 cloves garlic, 2-1/2tb soy sauce and 1-1/2tb sesame oil. Marinate with sirloin for 30 minutes.
  • Bring 10-11 and remaining 6-8 to a boil. Meanwhile, arrange remaining onion and 12-15 around edges of a separate pot and add sirloin and noodles to center.
  • When stock begins boiling, pour into the other pot, cover, bring back to a boil and simmer for 10-15 minutes, stirring occasionally. Add scallions and serve.
