Oyakodon

Serves 2

  1. 1 cup broth
  2. 3tb soy sauce
  3. 2tb mirin
  4. 1-1/2tb sugar
  5. 1tb sake
  6. 2 boneless chicken thighs, cut into 1/2in pieces
  7. Half an onion, thinly sliced
  8. 4 eggs, beaten
  9. 1-1/2 cups cooked rice, divided
  10. 2 scallions
  • Bring 1-5 to a simmer. Add chicken and cook for 5 minutes. Add onion and cook for 5 minutes. Add 3/4 of eggs and cook covered until just set, about 4-5 minutes. Add remaining egg and divide over rice. Top with scallions and serve.
