Pork loin with chile rice

Serves 4

  1. 1.5-2lb pork loin, sliced into 4 chops
  2. 1 onion
  3. 3 cloves garlic
  4. 1tb pureed chipotle in adobo sauce
  5. 1tsp dried oregano
  6. 1tsp ancho chile powder
  7. 1/4tsp coriander
  8. 1/8tsp cayenne
  9. 1-1/2 cup long-grain rice
  10. 4 cups broth
  11. 4tb cilantro
  12. 2tb olive oil
  13. 1tb honey
  14. Zest and juice of 2 limes
  • Brown pork on one side for 5 minutes. Set aside.
  • Cook onion for 5 minutes. Add 3-8 for 1 minute. Add rice for 1 minute. Add broth and pork, bring to a simmer and cover for 6-8 minutes.
  • Set chops aside, stir rice cover and continue simmering for 10-15 minutes. Add 2tb cilantro to rice and set aside. Mix remaining cilantro with 12-14 and serve.
