Easy skillet spanakopita

Serves 4

  1. 20oz spinach, fresh or thawed and squeezed dry
  2. 1tb butter
  3. 3 cloves garlic
  4. 1/4tsp salt
  5. 1/4tsp pepper
  6. 1/8tsp cayenne
  7. 1/8tsp nutmeg
  8. 8oz feta
  9. 6oz whole-milk ricotta
  10. 2 eggs
  11. 4 scallions
  12. 4tb mint
  13. 2tb dill
  14. 20 14in x 9in phyllo sheets, thawed
  • If using fresh spinach, wilt in a 10in skillet, squeeze dry and chop.
  • Return spinach to skillet with butter for 4-5 minutes or until pan is dry. Add 3-6 for 1 minute. Set aside for 5 minutes. Mix with 8-13 and spread evenly in skillet.
  • Spray phyllo sheets with cooking spray, crumple into 2in balls and top spinach mixture. Bake at 375 degrees for 25 minutes. Cool for 10 minutes. Serve.
