Makes 2 dozen
- 2 eggs + 1 yolk
- 3-1/2oz sugar
- 1tb vanilla extract
- 4oz cake flour
- 1/4tsp salt
- 10tb butter, melted and cooled
- Beat eggs until frothy. Beat in 2-3 until thickened. Fold in 4-5. Fold in butter.
- Fill 12-cookie madeleine mold completely with half of batter and bake at 375 degrees for 10 minutes, flipping halfway. Let cool in mold for 10 minutes, transfer to rack and repeat. Cool for 1 hour before serving.
