Serves 4-6

  1. 2lb potatoes, peeled
  2. 1 onion
  3. 1 egg
  4. 1tsp cornstarch
  5. 2tb matzo meal or crushed crackers
  6. 4 scallions or 1/2 cup chives
  7. 3tb fresh herb
  • Grate potatoes. Set half aside and process remaining with onion in 5-6 pulses. Mix with shredded potatoes and squeeze dry. Let drain for an additional 30 minutes if desired.
  • Mix in remaining ingredients. Heat 1/4in oil in a 12in pan and fry 4tb 1/2in patties for 3 minutes on each side in 2 batches. Serve. Can be reheated in 375 degree oven for 5 minutes per side.
