- 2lb potatoes, peeled
- 1 onion
- 1 egg
- 1tsp cornstarch
- 2tb matzo meal or crushed crackers
- 4 scallions or 1/2 cup chives
- 3tb fresh herb
- Grate potatoes. Set half aside and process remaining with onion in 5-6 pulses. Mix with shredded potatoes and squeeze dry. Let drain for an additional 30 minutes if desired.
- Mix in remaining ingredients. Heat 1/4in oil in a 12in pan and fry 4tb 1/2in patties for 3 minutes on each side in 2 batches. Serve. Can be reheated in 375 degree oven for 5 minutes per side.
