Home fries

Serves 2-4

  1. 1lb yukon potatoes
  2. 1 onion
  3. 2-1/2tb oil
  4. 1tsp paprika
  5. 1tsp thyme
  6. 1 clove garlic
  7. 1tb butter
  • Quarter potatoes lengthwise. Cut each piece into 4 strips and dice. Cover in salted water, bring to a boil and drain.
  • Meanwhile, cook onion and 1tb oil for 8-9 minutes. Add 4-6 for 1 minute. Set aside.
  • Heat remaining oil and butter and cook potatoes in a single layer without flipping for 4-5 minutes. Flip and repeat 3-4 times, add back onion and serve.
