Veggie hash with baked eggs

Omit eggs and skip oven to make vegan

Serves 4

  1. 1-1/2lb russet potatoes, peeled and cut into 1/2in pieces
  2. 1 red bell pepper, sliced
  3. 1 green bell pepper, sliced
  4. 1 onion, sliced
  5. Desired seasonings
  6. 1tsp hot sauce
  7. 4 eggs
  • Microwave potatoes for 5 minutes. Drain.
  • Cook potatoes in a 12in or 2 10in skillets for 5 minutes, tossing occasionally. Add 2-4 and cook for 5 minutes. Add 5-6 for 1 minute. Make 4 indentations, add eggs and transfer to a 400 degree oven on the top-middle rack until whites just set, about 3 minutes. Serve.
