Fried onion burgers

Serves 4

  1. 1 onion, sliced
  2. 1tsp salt
  3. 1/2tsp pepper
  4. 12oz 85% beef
  5. 1tb butter
  6. 1tsp oil
  7. 4 buns, toasted
  • Toss 1-2 and drain for 30 minutes.
  • Squeeze onions dry and toss with pepper. Form 4 2in mounds, divide beef in slightly packed balls on top and press down to form 4in patties.
  • Fry patties onion-side down in 5-6 for 5-7 minutes. Flip and sear beef for 2 minutes. Serve.
