Fluffy baked omelette

Omit meat or replace with extra veggies to make vegetarian

Serves 2

  1. 1 shallot, sliced
  2. 2oz meat or fish
  3. 4oz veggies
  4. Desired herbs, spices or seasonings
  5. 4 eggs, separated
  6. 2tb butter, 1tb melted
  7. 1/4tsp cream of tartar
  8. 1oz cheese
  • Cook 1-4 and set aside.
  • Whisk yolks with melted butter. Beat whites and cream of tartar to stiff peaks. Fold in yolk mixture.
  • Melt remaining butter in a 12in skillet on med-high heat, add eggs, take off-heat and add cooked mixture and cheese. Transfer to a 375 degree oven and bake for 4.5-5 minutes.
  • Remove omelette from pan and rest for 30 seconds. Halve and serve.
