Omit meat or replace with extra veggies to make vegetarian
- 1 shallot, sliced
- 2oz meat or fish
- 4oz veggies
- Desired herbs, spices or seasonings
- 4 eggs, separated
- 2tb butter, 1tb melted
- 1/4tsp cream of tartar
- 1oz cheese
- Cook 1-4 and set aside.
- Whisk yolks with melted butter. Beat whites and cream of tartar to stiff peaks. Fold in yolk mixture.
- Melt remaining butter in a 12in skillet on med-high heat, add eggs, take off-heat and add cooked mixture and cheese. Transfer to a 375 degree oven and bake for 4.5-5 minutes.
- Remove omelette from pan and rest for 30 seconds. Halve and serve.
