Strawberry-almond-vanilla bean tart

Serves 8-12

  1. 156g flour
  2. 96g almond flour
  3. 1tsp salt
  4. 135g sugar
  5. 10tb butter, cut into pieces and chilled
  6. 1tb whole milk
  7. 1lb strawberries, quartered
  8. 2tb cornstarch
  9. 1 vanilla bean, pod reserved for other use
  10. 1tsp lemon juice
  11. 2tb sliced almonds
  • Whisk 1-3 and 100g sugar. Cut in butter until texture resembles sand. Gently incorporate milk with a fork. Press 2/3 of dough into a 13-3/4in x 4-1/4in x 1in tart pan, reserving remaining dough. Chill for 30 minutes.
  • Meanwhile, toss 7-10 with remaining sugar and rest. Place into tart pan and top with reserved dough and sliced almonds. Bake at 350 degrees for 45-50 minutes.
