Pasta with fried capers, garlic and anchovies

Serves 4

  1. 1lb pasta
  2. 1/3 cup olive oil
  3. 8 cloves garlic, sliced
  4. 1tsp red pepper flakes
  5. 2oz anchovies
  6. 4tb capers + 3tb brine
  7. Zest and juice from 1 large lemon
  8. 1 cup parsley
  9. 1oz parmesan
  • Under-cook pasta by 2 minutes. Reserve 2 cups cooking water and drain. Set aside.
  • Cook 2-5 and capers for 5 minutes. Add reserved cooking water, bring to a simmer, add pasta and cook for 2 minutes. Take off-heat, add remaining ingredients and serve.
