Hard-boiled eggs

Makes 12

  1. 12 eggs
  2. 4 cups ice
  • Cover eggs with 1in of water. Bring to a boil, cover and rest off-heat for 10 minutes.
  • Combine ice with 4 cups of cold water . Drain eggs, tap lightly on hard surface to crack slightly and place in ice bath for 5 minutes. Drain and serve.
