Turkey breast with stuffing

Serves 4-6

  1. 1/2 cup salt
  2. 1 galleon water
  3. 6-7lb bone-in turkey breast
  4. 5tb butter
  5. 2tb sage
  6. 2tb thyme
  7. 4 cloves garlic
  8. 1 onion
  9. 2 stalks celery
  10. 1lb bread, cut into 1/2in pieces
  • Mix 1-2 and brine turkey for 3-6 hours.
  • Mix 3tb butter with half of 5-7. Divide over and under skin.
  • Place 16in x 12in roasting pan over two burners and melt remaining butter. Cook 7-8 for 5 minutes. Add remaining 5-7 for 1 minute. Add turkey, add bread around turkey and roast at 425 degrees for 30 minutes.
  • Lower temperature to 325 degrees and continue roasting for 1 hour. Rest for 15 minutes and serve.

Easy chicken pie with artichoke and spinach

Serves 4

  1. 20oz frozen spinach, thawed and squeezed dry
  2. 1 5.2oz package Boursin garlic and herb cheese
  3. 1 cup artichoke hearts, halved
  4. 2 carrots, shredded
  5. 3/4 cup broth
  6. 1/2 cup cream
  7. 1/4 cup capers
  8. 1tb wondra or regular flour
  9. 12oz chicken breast, thinly sliced
  10. Zest from 1 lemon
  11. 1 9.5in x 9in puff pastry sheet, thawed
  12. 1 egg
  • Mix 1-8 and place in a 8in baking dish. Mix 9-10 and add to dish. Trim puff pastry and top dish. Dish can be refrigerated for 1 day at this point.
  • Mix egg with 2tb water and brush over pastry. Bake at 425 degrees for 30-35 minutes. Rest for 10 minutes and serve.

Deviled pork loin with potato gratin

Serves 4

  1. 2lb russet potatoes, peeled and sliced 1/4in thick
  2. 3/4 cup broth
  3. 1/2tsp rosemary
  4. 1/2tsp onion powder
  5. 1/4tsp garlic powder
  6. 1 cup panko
  7. 3/4 cup cream
  8. 2tb wondra or regular flour
  9. 1tb dijion
  10. 1/2tb mayo
  11. 1/2tb hot sauce
  12. 1-1/2oz parmesan
  13. 1.5-2lb pork loin, sliced into 4 chops
  • Microwave 1-5 for 8 minutes. Meanwhile, toast panko in a dry skillet and set aside.
  • Mix 7-8 with potatoes and bake in a foil-covered 13in x 8in baking dish at 400 degrees for 30 minutes.
  • Meanwhile, mix 10-12 and mix 4tb parmesan with panko. Brush pork on one side with mustard mixture and coat in crumbs. Remove foil from potatoes, add remaining parmesan and top with pork. Continue baking for 10-15 minutes. Rest for 10 minutes and serve.

Beef, shiitake and broccoli teriyaki stir-fry

Serves 4

  1. 1lb flank steak
  2. 4tb soy sauce
  3. 7tsp sugar
  4. 2tsp cornstarch
  5. 8oz shiitake mushrooms
  6. 12oz broccoli, stems and florets seperated
  7. 4tb water
  8. 3 cloves garlic
  9. 1tb ginger
  10. 3 scallions, whites chopped and greens cut into 1-1/2in pieces
  11. 1tb mirin
  12. 1/4tsp red pepper flakes
  • Mix flank steak with 2tb soy sauce, 1tsp sugar and 1tsp cornstarch. Rest for 10 minutes.
  • Brown steak without stirring for 2 minutes per side in a 12in skillet in 2 batches. Set aside.
  • Cook mushrooms for 3-4 minutes. Add broccoli stems for 1-2 minutes. Add florets and water, cover and cook for 2-3 minutes.
  • Add 8-9 and scallion whites and cook for 1 minute. Add scallion greens, steak, and remaining 2-4 mixed with 11-12 for 1-2 minutes. Serve.

Pork loin with chile rice

Serves 4

  1. 1.5-2lb pork loin, sliced into 4 chops
  2. 1 onion
  3. 3 cloves garlic
  4. 1tb pureed chipotle in adobo sauce
  5. 1tsp dried oregano
  6. 1tsp ancho chile powder
  7. 1/4tsp coriander
  8. 1/8tsp cayenne
  9. 1-1/2 cup long-grain rice
  10. 4 cups broth
  11. 4tb cilantro
  12. 2tb olive oil
  13. 1tb honey
  14. Zest and juice of 2 limes
  • Brown pork on one side for 5 minutes. Set aside.
  • Cook onion for 5 minutes. Add 3-8 for 1 minute. Add rice for 1 minute. Add broth and pork, bring to a simmer and cover for 6-8 minutes.
  • Set chops aside, stir rice cover and continue simmering for 10-15 minutes. Add 2tb cilantro to rice and set aside. Mix remaining cilantro with 12-14 and serve.

Easy skillet spanakopita

Serves 4

  1. 20oz spinach, fresh or thawed and squeezed dry
  2. 1tb butter
  3. 3 cloves garlic
  4. 1/4tsp salt
  5. 1/4tsp pepper
  6. 1/8tsp cayenne
  7. 1/8tsp nutmeg
  8. 8oz feta
  9. 6oz whole-milk ricotta
  10. 2 eggs
  11. 4 scallions
  12. 4tb mint
  13. 2tb dill
  14. 20 14in x 9in phyllo sheets, thawed
  • If using fresh spinach, wilt in a 10in skillet, squeeze dry and chop.
  • Return spinach to skillet with butter for 4-5 minutes or until pan is dry. Add 3-6 for 1 minute. Set aside for 5 minutes. Mix with 8-13 and spread evenly in skillet.
  • Spray phyllo sheets with cooking spray, crumple into 2in balls and top spinach mixture. Bake at 375 degrees for 25 minutes. Cool for 10 minutes. Serve.

Baked cheesy huevos rancheros

Serves 4-8

  1. 8 6in corn tortillas
  2. 8 cups salsa
  3. 4oz pepper jack cheese
  4. 8 eggs
  5. 1 avocado, diced
  6. 2 scallions
  7. 4tb cilantro
  • Brush tortillas with oil and salt on both sides. Bake in a single layer at 450 degrees for 5-7 minutes. Flip and continue baking for 2-3 minutes. Set aside.
  • Meanwhile, pour salsa baking dish, top with cheese, make 8 indentations and add eggs. When tortillas are done, raise temperature to 500 degrees and bake for 7-9 minutes. Top with 5-7 and serve.
