Weeknight skillet pizza

Serves 2

  1. 2tb olive oil
  2. 12oz store-bough pizza dough
  3. 1/3 cup sauce
  4. 1/8tsp red pepper flakes
  5. 3oz shredded mozzarella
  6. 4tb parmesan
  7. Desired toppings
  • Brush 12in skillet with oil. Roll dough out to 14in, rest for 5 minutes and press into bottom and sides of skillet. Poke 10-15 times with a fork, cover and cook on medium heat for 6-7 minutes or until bottom is brown and spotty.
  • Remove from heat, spread sauce (leave a 1/2in border) and top with 4-7. Broil 6in away from heating element for 5 minutes or until cheese is spotty and brown. Cool for 5 minutes and serve.
