Spiced molasses-lemon marble buttermilk cake

Each batter can make one 9in x 5in loaf cake. Decrease baking time by 10-20 minutes.

Serves 12-16

Molasses batter:

  1. 6tb butter
  2. 80g brown sugar
  3. 3 egg yolks
  4. 3/4 cup unsulfured molasses
  5. 200g flour
  6. 1/2tsp baking soda
  7. 1/2tsp cream of tartar
  8. 1/2tsp cinnamon
  9. 1/4tsp mace
  10. 1/4tsp nutmeg
  11. 1/4tsp cloves
  12. 6tb buttermilk
  • Cream butter and sugar. Beat in yolks 1 at a time. Beat in molasses. Combine 5-11 and alternately beat in batter alternately with buttermilk in 5 additions, beginning and ending with dry ingredients.

Lemon batter:

  1. 6tb butter
  2. 198g sugar
  3. 2 lemons, zested and juiced
  4. 200g flour
  5. 1/2tsp baking soda
  6. 1/2tsp cream of tartar
  7. 3/4 cup buttermilk
  8. 3 egg whites
  9. 1/8tsp salt
  • Beat 1-2 and lemon zest. Beat in 1tb lemon juice, reserving 3tb and discarding remaining. Combine 4-6 and alternately beat in batter alternately with buttermilk in 5 additions, beginning and ending with dry ingredients.
  • Separately, beat 8-9 to soft peaks. Fold a quarter the whites into the batter. Fold in remaining whites.

Cake assembly

  1. Molasses batter
  2. Lemon batter
  3. Reserved lemon juice
  4. 1-1/2 cup powdered sugar
  • Alternate dollops of batter in a 10in tube pan or bundt pan in 3 additions each. Tap pan to remove any air bubbles and use a butter knife to slightly swirl batters. Bake at 350 degrees for 50-55 minutes for a tube pan or 40-45 minutes for a bundt pan. Cool in pan for 10 minutes, transfer to rack and cool for 1 hour. Combine 3-4 and drizzle over cake. Serve.
