Quick navy bean soup

Serves 4

  1. 2oz bacon
  2. 8oz ham, cut into 1/2in pieces
  3. 2 carrots, cut into 1/2in pieces
  4. 2 stalks celery
  5. 2 onions
  6. 4 cloves garlic
  7. 1/4tsp thyme
  8. 2 cans navy beans
  9. 2 cups water
  10. 1-1/2 cup broth
  11. 2 bay leaves
  12. 1/2tsp red wine vinegar
  13. 1tsp hot sauce
  • Render and crisp bacon and set aside. Brown ham and set aside.
  • Cook 3-5 for 5 minutes. Add 6-7 for 1 minute. Add 8-12 and simmer for 15 minutes. Mash a quarter of the beans and add back meat. Discard bay leaves, add hot sauce and serve.
