Potato, leek and kielbasa soup

Serves 4

  1. 2tb butter
  2. 8oz kielbasa, halved and cut into 1/2in pieces
  3. 2lb leeks, halved and cut into 1in pieces
  4. 1/4tsp thyme
  5. 1 clove garlic
  6. 2tb flour
  7. 6 cups chicken broth
  8. 12oz red potatoes, cut into 3/4in pieces
  • Heat butter, brown sausage for 5 minutes and set aside.
  • Add leeks and cook covered, stirring occasionally, for 15 minutes. Add 4-5 for 1 minute. Add flour for 1 minute. Whisk in broth, add back sausage and potatoes and simmer for 15 minutes. Serve.
