Pork rib roast with potatoes and asparagus

Serves 8

  1. 4-5lb pork rib roast, chine bone removed and fat cap trimmed 1/4in thick
  2. 1tb brown sugar
  3. 1/2tb salt
  4. 1tsp pepper
  5. 2lb yukon potatoes, halved
  6. 1tb fresh herbs
  7. 2tb oil
  8. 2lb asparagus
  9. 1 cup parsley
  10. 1/2 cup extra-virgin olive oil
  11. 2tb capers
  12. 4tsp lemon juice
  13. 2 anchovy filets
  14. 1 clove garlic
  • Rub pork with 2-3, wrap in plastic and chill for 6-24 hours. Brush off mixture and add pepper.
  • Toss 5-6, 1tb oil and salt and pepper. Place cut-side down in a roasting pan and place pork on rack. Roast at 400 degrees for 1-1/2 hours or until internal temperature reaches 130 degrees.
  • Toss asparagus with salt and pepper and remaining oil, add to potatoes and continue roasting for 20 minutes. Combine 9-10 with salt and pepper. Slice pork and serve.
