Korean fajitas

Serves 4-6

  1. 2tb + 2tsp sesame oil
  2. 1/2 cup soy sauce
  3. 1/2 cup mirin
  4. 1tb garlic
  5. 1tb ginger
  6. 2tsp brown sugar
  7. 1-1/2lb chicken breast, flank steak, pork tenderloin or shrimp
  8. 1 cup napa cabbage, shredded
  9. 2 carrots, shredded to about 1/3 cup
  10. 2tb rice vinegar
  11. 1tsp honey
  12. 1/4tsp salt
  13. 1 onion, thinly sliced
  14. 1 red bell pepper, thinly sliced
  15. 4tb mayo
  16. 1tb gochujang
  17. Cilantro
  18. Flour torillas
  • Combine 2tb sesame oil with 2-7 and marinate for 1 hour
  • Combine remaining sesame oil with 8-12. Set aside.
  • In batches, sear meat and 13-14 for 2-3 minutes. Combine 15-16 and serve with fajitas along with 17-18.
