Chocolate cheesecake

Serves 12

  1. 16 oreos
  2. 3-1/2oz + 1tb sugar
  3. 2tb butter, melted
  4. 6oz milk chocolate
  5. 1/3 cup cream
  6. 2tb cocoa powder
  7. 1/4tsp salt
  8. 1-1/2lb cream cheese
  9. 4 eggs
  10. 2tsp vanilla extract
  • Process oreos and 1tb sugar and pulse in butter. Press into the bottom of a 9in spring-form pan and bake at 350 degrees for 10 minutes. Let cool.
  • Meanwhile, melt 4-5 and set aside to cool for 10 minutes.
  • Beat 6-8 and remaining sugar on medium speed for about 3 minutes. Turn speed to low and beat in chocolate mixture. Beat in eggs one at a time. Beat in vanilla.
  • Place pan on baking sheet, pour in batter and tap to pop any air bubbles. Wrap in foil and bake at 250 degrees for 1 hour. Remove foil and continue baking for 30-45 minutes or until internal temperature reaches 150. Cool and room temperature and chill for at least 8 hours.
