Beef lime and basil stir-fry

Serves 4

  1. 7tb soy sauce
  2. 2tsp cornstarch
  3. 1lb flank steak, cut into 1/4in strips
  4. 1 red bell pepper
  5. 1 onion
  6. 4 cloves garlic
  7. 1tb ginger
  8. 3 limes, 1 juiced and 2 cut into wedges
  9. 1tb fish sauce
  10. 1tsp oyster sauce
  11. 1tsp sugar
  12. 1 small bunch basil
  • Combine 3tb soy sauce with 1/2tb cornstarch, toss with steak and rest for 15 minutes.
  • Sear steak for 1 minute per side and set aside. Add 4-5 for 5 minutes. Add 6-7 for 1 minute. Add back steak, remaining soy sauce and cornstarch, lime juice and 9-11 and simmer for 1-2 minutes. Add basil and serve with lime wedges.
