- 1-1/2lb red potatoes, halved
- 2-1/2 cups water
- 1 onion, halved and sliced 1/2in thick
- 2 slices thick-cut bacon, cut into 1in pieces
- 2tsp thyme
- Place potatoes cut-side down in a 12in skillet. Add 2-4 and simmer covered for 20 minutes.
- Uncover, turn up heat and cook until water is evaporated. Continue cooking on high heat, stirring occasionally, for 5-7 minutes. Add thyme and serve.
