Yellow Thai coconut curry

Omit chicken/shrimp and add extra 1lb veggies to make vegan

Serves 4

  1. 4oz yellow curry paste
  2. 12oz carrots, sliced 1/2in thick
  3. 1 onion
  4. 1 red bell pepper, cut into 1in pieces
  5. 1lb boneless thighs, cut into 1in pieces OR 1lb shrimp
  6. 1lb yukon potatoes, peeled and cut into 1/2in pieces
  7. 1 can coconut milk
  8. 1-1/2 cup broth
  9. 1 small bunch basil or cilantro
  10. 4 cups cooked rice
  • Cook paste for 1 minute. Add 2-4 and cook for 10 minutes. Add chicken if using and 6-8 and simmer for 15 minutes. Add shrimp if using and continue simmering for 5 minutes. Serve with 9-10.
