Pork shoulder diablo

Serves 8

  1. 1tb peppercorns
  2. 1tb coriander seeds
  3. 1tb red pepper flakes
  4. 1tb oregano
  5. 1tb yellow mustard seeds
  6. 1tb lemon zest
  7. 2tsp paprika
  8. 6 cloves garlic
  9. 1/2 cup olive oil
  10. 6lb skinless boneless pork shoulder
  • Crush and combine 1-8. Cook 8-9 for 1 minute, take-off heat and add spice mixture. Rub pork with mixture, tie every 1in, wrap in plastic and chill for at least 8 hours and up to 3 days.
  • Rest at room temperature for 1 hour. Place on a rack and roast at 375 degrees until fat begins rendering, about 40-50 minutes. Reduce temperature to 300 degrees and roast for 1.5-2 hours. Rest for 30 minutes. Slice and serve.
