Pastrami pork spareribs

Serves 4

  1. 1 rack St. Louis spareribs, about 2lb
  2. 4tb white vinegar
  3. 1/2 cup pepper
  4. 1tb salt
  5. 1tb coriander
  6. 1tb brown sugar
  7. 1tb mustard powder
  8. 1tb smoked paprika
  9. 1/2tsp cayenne pepper
  10. 1/2 cup water
  11. 4tb dijion mustard
  12. 3tb cider vinegar
  13. 3tb honey
  14. 2tb soy sauce
  • Brush ribs with white vinegar and rub with 3-9. Chill on a rack for at least 1 hour and up to 1 day.
  • Transfer fat-side up to a roasting pan (do not place on rack) along with water. Cover with foil and roast at 325 degrees for 2 hours. Rest for 30 minutes.
  • Brush ribs on both sides with 11-14 and broil for about 3 minutes or until lightly charred
