Sichuan noodles

Serves 4

  1. 8oz ground pork
  2. 2tb sherry
  3. 1/4tsp white pepper
  4. 3tb soy sauce
  5. 6 cloves garlic
  6. 1tb ginger
  7. 3/4tsp red pepper flakes
  8. 4tb Chinese sesame paste
  9. 2tb oyster sauce
  10. 1tb rice vinegar
  11. 1-1/4 cups broth
  12. 1tb sesame oil
  13. 12oz dried or 1lb fresh Chinese noodles
  14. 4oz bean sprouts
  15. 3 scallions
  16. 1tb Sichuan peppercorns, toasted and crushed
  • Cook 1-3 and 1tb soy sauce for 5 minutes. Add 5-7 for 1 minute. Add 8-11 and remaining soy sauce, bring to a boil and simmer for 3 minutes. Set aside and add sesame oil.
  • Meanwhile, cook noodles, 10 minutes if using dried or 4-5 minutes if using fresh. Combine with sauce and 13-16. Serve.
