O’Brien potatoes

Use vegan worcestershire sauce to make vegan

Serves 4

  1. 1-1/2lb red potatoes, cut into 1/2in pieces
  2. 1 green bell pepper, cut into 1/2in pieces
  3. 1 red bell pepper, cut into 1/2in pieces
  4. 1 onion, cut into 1/2in pieces
  5. 2 cloves garlic
  6. 1tsp dried thyme
  7. 1/2 cup broth
  8. 1tb worcestershire sauce
  9. 1/2tb salt
  10. 4 scallions
  • Cook 1-6 for 1 minute in a 12in skillet. Add 7-9 and simmer covered for 15 minutes. Uncover, increase heat to medium-high and cook until liquid is gone and veggies are browned, about 12 minutes. Add scallions and serve.
