Horseradish parsley stuffing for red meat

For 4-5lb meat

  1. 8 anchovies
  2. 4 cloves garlic
  3. 1 cup parsley
  4. 1/3 cup fresh grated horseradish
  5. 1/3 cup olive oil
  6. 2tsp red pepper flakes
  7. 1/2tsp nutmeg
  • Combine ingredients. Stuff butterflied meat, reserving 2tb to rub on outside.
