Scallion kimchi

Makes 2 cups

  1. 1 bunch scallions, cut into 3in pieces
  2. 2tsp salt
  3. 1 clove garlic
  4. 4tb gochugaru
  5. 1tb brown sugar
  6. 1tb ginger
  7. 1tb sesame oil
  8. 1tb sesame seeds
  9. 1tb fish sauce
  10. 1tb rice vinegar
  • Toss 1-2 and rest for 10 minutes. Toss with remaining ingredients, cover and leave out at room temperature for 1-3 days. Transfer to fridge. Lasts 1 month.
