Israeli couscous with zucchini, mozzarella and basil

Serves 4-6

  1. 7oz pearl couscous
  2. 12 6in zucchini, sliced 1/4in thick
  3. 7oz mozzarella or burrata, cut into pieces
  4. 1-1/2oz pecorino, shaved
  5. 1 bunch basil
  6. Juice of 1 lemon
  7. 1 bunch basil
  8. 2tb olive oil
  • Cook couscous; meanwhile, fry zucchini for 5-6 minutes per side. Toss all ingredients and serve.
