Cider cod and mussel chowder

Serves 4

  1. 2-1/2lb mussels
  2. 2 bottles hard cider
  3. 2tb butter
  4. 2 leeks
  5. 1 carrot
  6. 1 stalk celery
  7. 2tsp thyme
  8. 2 cloves garlic
  9. 2 russet potatoes, cut into 1/2in pieces
  10. 1/2 cup cream
  11. 1lb cod, cut into 1in pieces
  12. 1tb lemon juice
  13. 2tb parsley
  • Steam 1-2. Strain liquid and set mussel meat aside; discard shells.
  • Cook 3-6 for 15 minutes. Add 7-8 for 1 minute. Add back cider along with potatoes and simmer for 10-15 minutes.
  • Add 8-9 for 2-3 minutes. Add mussels and 10-11. Serve.
