Cherry almond cake

Serves 8-10

  1. 18tb butter, 7tb diced and chilled, 9tb softened and 2tb melted
  2. 2 cups flour
  3. 1/2tsp salt
  4. 4tb powdered sugar
  5. 2/3 cup sugar
  6. 3 eggs
  7. Zest of 1 lemon
  8. 1tsp vanilla extract
  9. 1/4tsp almond extract
  10. 1 cup almond flour
  11. 1tsp baking powder
  12. 2tb sour cream
  13. 12oz cherries, pitted
  14. 3tb cherry jam
  15. 1/2 cup sliced almonds
  16. 4tb brown sugar
  • Cut chilled butter into 1 cup flour, 1/8tsp salt and powdered sugar. Bake in a parchment-lined 8in spring-form pan at 350 degrees for 12 minutes.
  • Cream softened butter and sugar. Beat in eggs. Beat in 7-9. Sift 2/3 cup flour and 10-11 and beat in. Beat in sour cream.
  • Spread jam on crust, leaving a 1/2in border on edges. Add batter and cherries. Mix remaining flour with melted butter and 15-16 and sprinkle on top. Bake for 45-60 minutes.
