Maple sugar ice cream

Makes 1 quart

  1. 3-1/4 cup cream
  2. 1-1/4 cup milk
  3. 1 cup maple sugar
  4. 1/2tb salt
  5. 11 yolks (not 12)
  6. 1tsp vanilla extract
  • Simmer 1-4 until temperature reaches 175 degrees.
  • Temper yolks and continue simmering for about 5 minutes or until mixture thickens enough to coat spoon. Strain and cool mixture in ice bath for 5 minutes, stirring occasionally.
  • Add vanilla and proceed according to machine directions. Freeze for 2 hours.
