Lemony peas with bacon and tarragon

Serves 4

  1. 2oz bacon
  2. 1 shallot, sliced
  3. 1 clove garlic
  4. 1lb frozen peas, rinsed under hot water for 4 minutes.
  5. 2tb butter
  6. 2tb tarragon
  7. Zest from 1 lemon
  8. 1tsp vinegar or lemon juice
  • Render and crisp bacon. Add 2-3 and cook for 2 minutes. Add 4-5 and cook for 2 minutes. Add remaining ingredients and serve.
