- 2 cans or 4 cups cooked white beans
- 2 stalks celery, cut into 1/2in cubes
- 1 red onion, sliced
- 1/2 cup parsley
- 8oz manchego cheese, cut into 1/2in cubes
- 6tb olive oil
- 4tsp red wine vinegar
- 2tsp water
- 1tsp dijion mustard
- 1 clove garlic
- 1 shallot
- Toss 1-5. Combine 6-11 and toss with salad.
