White bean manchego salad

Serves 4

  1. 2 cans or 4 cups cooked white beans
  2. 2 stalks celery, cut into 1/2in cubes
  3. 1 red onion, sliced
  4. 1/2 cup parsley
  5. 8oz manchego cheese, cut into 1/2in cubes
  6. 6tb olive oil
  7. 4tsp red wine vinegar
  8. 2tsp water
  9. 1tsp dijion mustard
  10. 1 clove garlic
  11. 1 shallot
  • Toss 1-5. Combine 6-11 and toss with salad.
