Tom yum moo

Serves 4

  1. 3 lemongrass stalks, trimmed to bottom 6in and sliced
  2. 3 shallots
  3. 1 small bunch cilantro
  4. 3tb fish sauce
  5. 4 cups stock
  6. 2 cans coconut milk
  7. 1tb sugar
  8. 8oz mushrooms, sliced
  9. 1lb pork tenderloin, cut into strips
  10. Juice from 2 limes
  11. 2tsp red curry paste
  12. 2 serrano chilies, sliced
  13. 2 scallions, sliced
  • Cook 1-2, 8 sprigs cilantro and 1tb fish sauce for 2-5 minutes. Add stock and 1 can coconut milk, simmer for 10 minutes and strain.
  • Bring stock to a simmer along with remaining coconut milk and sugar. Add mushrooms and cook 3 minutes. Add pork and cook 2 minutes. Remove from heat, stir in 10-11 and remaining fish sauce and top with 12-13 and remaining cilantro.
