Pita bread

Makes 8 8in pitas

  1. 570g bread flour
  2. 8g yeast
  3. 13g salt
  4. 1-1/3 cups water
  5. 4tb olive oil
  6. 8g sugar
  7. Flour for coating
  • Mix 1-3 and set aside. Mix 4-6, mix into flour mixture and knead until smooth and elastic. Cover ans rise until doubled, about 1-1.5 hours.
  • Deflate dough and divide into 8 balls. Coat with flour and gently press into 8in rounds. Rest for 20 minutes.
  • Preheat cast iron skillet in a 500 degree oven. Bake pita for 1 minute or until air pocket begins to form, flip and continue baking for 1-2 minutes. Set aside, place skillet back in oven for 5 minutes and repeat.
