Fried spicy beef dumplings

Makes about 3 dozen

  1. 1 onion
  2. 1tsp chili oil
  3. 1lb ground beef
  4. 3 scallions or 1/3 cup chives
  5. 2tb oyster sauce
  6. 2tb soy sauce
  7. 1tb fresh ginger
  8. 1tb sesame oil
  9. 1tsp pepper
  10. 1/4tsp salt
  11. Dumpling wrappers
  12. 4tb flour
  13. 4tb white vinegar
  14. 2 cups water
  • Cook onion for 5-10 minutes. Add chili oil, set aside to cool and mix with 3-10. Fill wrappers with about 1tb of filling and set aside.
  • Mix 12-14. Place a 10in skillet on med-high heat, place about 8 dumplings 1/2in apart and pour in about 6tb of flour-vinegar mixture. Partially cover and cook for 1-2 minutes. Lower heat and cook for 2-3 minutes. Remove lid and cook until liquid is gone, about 3-4 minutes. Flip on a serving plate crispy-side up and repeat with remaining dumplings.
