Cod with saffron, chorizo and potatoes

Serves 4

  1. 1 onion
  2. 3oz spanish chorizo, sliced 1/4in thick
  3. 4 cloves garlic
  4. 1/4tsp saffron
  5. 1 8oz bottle clam juice
  6. 3/4 cup water
  7. 1/2 cup white wine
  8. 4oz small red potatoes, sliced 1/4in thick
  9. 1 bay leaf
  10. 4 4-6oz cod filets, 1-1.5in thick
  11. 1tsp lemon juice
  12. 2tb parsley
  • Cook 1-2 for 5 minutes. Add 3-4 for 1 minute. Add 5-9 and simmer covered for 10 minutes.
  • Add cod and simmer covered for 10-12 minutes. Add 11-12 and serve.
