Pan-seared pork loin chops

Serves 4

  1. 2.5-3lb pork loin, about 7-8in long and 3-3.5in wide
  2. 1tb salt
  3. 2tsp pepper
  • Trim loin and cut into 4 equal pieces. Season evenly with 2-3 and rest for 1 hour.
  • Meanwhile, place a 12in skillet in a cold oven and heat to 500 degrees. Transfer to stove-top on med-high heat and sear chops for 2 minutes per side. Continue cooking flipping every 2 minutes for about 10-12 minutes or until internal temperature reaches 125 degrees. Rest and serve.
