Feijoada

Serves 8

  1. 3.5-4lb pork butt, cut into 1-1/2in pieces
  2. 4 slices bacon, chopped
  3. 2 onions
  4. 4 cloves garlic
  5. 1tb chili powder
  6. 1tsp cumin
  7. 1tsp coriander
  8. 1/2tsp salt
  9. 7 cups water
  10. 1lb dried black beans
  11. 2 bay leaves
  12. 1/8tsp baking soda
  13. 1lb linguica sausage, cut into 1/2in pieces
  14. 2 tomatoes
  15. 1 green bell pepper
  16. 1 jalepeno
  17. 1/3 cup white wine vinegar
  18. 3tb olive oil
  19. 1tb cilantro
  • Brown pork for 7-10 minutes in 2 batches. Set aside.
  • Cook bacon 5-7 minutes. Add 1 onion and cook 5 minutes. Add 4-8 and cook 1 minute. Add back pork and 9-12 and simmer covered in a 325 degree oven for 1-1/2 hours.
  • Add sausage and cook uncovered for 30 minutes. Meanwhile, toss 14-19 and allow to rest at least 30 minutes. Serve.
