Chinese ground beef and eggplant

Serves 4

  1. 1-1/2lb eggplant, cut into 1in pieces
  2. 3tb oil
  3. 2tb soy sauce
  4. 12oz ground beef
  5. 1 red jalapeno, sliced
  6. 4 cloves garlic
  7. 1tb ginger
  8. 4 scallions, whites and greens separated
  9. 2tb oyster sauce
  10. 1tb rice vinegar
  • Cook 1-2 for 10 minutes. Add soy sauce for 1 minute. Set aside.
  • Cook 4-7 and scallion whites for 5 minutes or just until pink no longer remains.
  • Add back eggplant, remaining soy sauce and 9-10 and cook for 2 minutes. Top with scallion greens and serve.
