Bacon meatloaf

Serves 6-8

  1. 1 onion
  2. 2 cloves garlic
  3. 1/2 cup whole milk or whole-milk yogurt
  4. 2 eggs
  5. 2tsp dijion mustard
  6. 2tsp worcestershire
  7. 1tsp salt
  8. 1/2tsp pepper
  9. 1/2tsp thyme
  10. 1/4tsp hot sauce
  11. 1lb ground chuck
  12. 8oz ground pork
  13. 8oz ground veal
  14. 16 saltines, crushed
  15. 1/3 cup parsley
  16. 4tb cup ketchup
  17. 2tb brown sugar
  18. 2tsp cider or white vinegar
  19. 8-12oz thin-sliced bacon
  • Cook 1-2 for 5 minutes and mix with 3-10. Mix in 11-14.
  • Shape into a 9in x 5in loaf on a foil-lined baking sheet. Mix 16-18, brush over loaf and cover with bacon, overlapping slightly and tucking ends under loaf. Bake at 350 for 1 hour. Rest 20 minutes before serving.
