Steak and kimchi stir-fry

Serves 4

  1. 1lb flank steak, cut into strips
  2. 5tb soy sauce
  3. 1tb cornstarch
  4. 1 cup kimchi
  5. 1tb kimchi brine
  6. 4oz bean sprouts
  7. 3 cloves garlic
  8. 1tb ginger
  9. 5 scallions, whites chopped and greens in 1in pieces
  10. 1/2 cup broth
  11. 1tb sugar
  12. 1tsp sesame oil
  • Mix steak with 3tb soy sauce and 1tsp cornstarch and rest for 15 minutes. Brown in a 12in skillet for 1 minute per side and set aside.
  • Add 4-5 and cook for 2 minutes. Add bean sprouts, clear middle of skillet and cook 7-8 and scallion whites for 1 minute. Stir, add back beef and remaining ingredients. Cook for 1-2 minutes until sauce thickens. Serve.
